​Fermenting your own probiotic-rich pickles at home is a rewarding process that enhances flavor and offers numerous health benefits. Fermented pickles are rich in probiotics, which support gut health, digestion, and may contribute to overall well-being.

Recipe: Homemade Probiotic Pickles

Ingredients:

  • 1 pound small pickling cucumbers

  • 1 tablespoon non-iodized sea salt​

  • 2 cups filtered water​

  • 2 cloves garlic, peeled​

  • 1 tablespoon mustard seeds​

  • 1 tablespoon coriander seeds​

  • 1 tablespoon black peppercorns​

  • A few sprigs fresh dill​

  • 1 bay leaf​

Instructions:

  1. Prepare the Cucumbers: Wash the cucumbers thoroughly. Trim approximately 1/4 inch from the end (the end opposite the stem) to prevent softening during fermentation.

  2. Prepare the Brine: In a bowl, dissolve the sea salt in filtered water to create the brine. Stir until the salt is fully dissolved.​

  3. Pack the Jar: In a clean quart-sized mason jar, place the garlic cloves, mustard seeds, coriander seeds, peppercorns, dill sprigs, and bay leaf at the bottom.​

  4. Add Cucumbers: Pack the cucumbers tightly into the jar, ensuring they are surrounded by the spices and herbs.​

  5. Add Brine: Pour the prepared brine over the cucumbers, ensuring they are fully submerged. Leave about 1 inch of headspace at the top of the jar.​

  6. Weigh Down: Place a fermentation weight or a clean, food-safe object on top of the cucumbers to keep them submerged under the brine. This helps prevent exposure to air, which can lead to mould.​

  7. Fermentation: Cover the jar loosely with a lid or cloth and set it aside at room temperature, away from direct sunlight.​

  8. Monitor Fermentation: The fun bit! Check the pickles daily. Get your little one to help! You may start tasting them after 3 days. Fermentation can take anywhere from 3 to 14 days, depending on temperature and personal taste preference.​

  9. Storage: Once the pickles have reached your desired flavor and tanginess, secure the lid tightly and refrigerate. They can be stored in the refrigerator for up to 2 months.​
